Marinated Shrimp & Rice

This bowl is fast, flavorful, and surprisingly easy. With sweet-savory marinated shrimp, fluffy rice, and tender broccoli, it’s the kind of meal you can throw together on a busy weeknight.

Ingredients

  • 7 oz raw shrimp (peeled & deveined)

  • 1 tbsp soy sauce (15g)

  • 1 tsp honey (7g)

  • 1 clove garlic, minced

  • Pinch of red pepper flakes

  • 1 tsp oil (5g)

  • 120g cooked white rice (about 60g dry)

  • 2 cups broccoli florets

Instructions

1. Marinate the Shrimp
In a bowl, whisk together soy sauce, honey, red pepper flakes, and garlic. Add thawed shrimp and toss to coat. Marinate for at least 20 minutes (or while rice cooks).

2. Cook the Rice
Rinse rice under cold water. Cook in a rice cooker or on the stovetop using a 2:1 water-to-rice ratio until tender.

3. Steam the Broccoli
Steam broccoli in a basket over simmering water for 5–6 minutes or microwave in a covered bowl with a splash of water for 2–3 minutes.

4. Cook the Shrimp
Heat oil in a pan over medium. Add shrimp (reserve marinade if desired) and cook 1–2 minutes per side until pink and cooked through. Add marinade in the last minute if you want a glaze.

5. Assemble the Bowl
Divide rice into two bowls. Top with shrimp and broccoli.

  • Reduce calories? Swap rice for cauliflower rice, or do a 1/2 blend.
