Tortellini Soup

A cozy one-pot dinner with creamy tomato broth, cheesy tortellini, and hearty ground pork.

Ingredients

  • 1 lb 90% lean ground pork

  • 1 tbsp olive oil

  • 3 cloves garlic, minced

  • 1 tsp Italian seasoning

  • 1 (28 oz) can crushed tomatoes

  • 6 cups beef stock

  • 1 (20 oz) bag frozen cheese tortellini

  • 3 cups spinach

  • ¼ cup heavy cream (optional)

  • ¼ cup parmesan cheese

  • Chopped parsley, for garnish

  • Salt and red chili flakes, to taste

Directions

  1. Heat a large stock pot over medium heat.

  2. Add olive oil and garlic. Sauté until fragrant, about 30 seconds.

  3. Add ground pork and cook through, breaking it up with a spoon. Remove and set aside.

  4. In the same pot, combine crushed tomatoes, beef stock, Italian seasoning, and chili flakes (optional). Bring to a boil.

  5. Add frozen tortellini. Reduce to a simmer and cook for 5–6 minutes until tender.

  6. Stir in spinach and cooked pork. Simmer for another 1–2 minutes, until spinach wilts.

  7. Add a splash of heavy cream if using. Adjust seasoning with salt to taste.

  8. Serve hot and top with parmesan and chopped parsley.

Recipe Tips

  • You can use ground turkey or beef instead of pork.

  • For more fiber, toss in zucchini or mushrooms.
