Tortellini Soup

A cozy one-pot dinner with creamy tomato broth, cheesy tortellini, and hearty ground pork.
Ingredients
1 lb 90% lean ground pork
1 tbsp olive oil
3 cloves garlic, minced
1 tsp Italian seasoning
1 (28 oz) can crushed tomatoes
6 cups beef stock
1 (20 oz) bag frozen cheese tortellini
3 cups spinach
¼ cup heavy cream (optional)
¼ cup parmesan cheese
Chopped parsley, for garnish
Salt and red chili flakes, to taste
Directions
Heat a large stock pot over medium heat.
Add olive oil and garlic. Sauté until fragrant, about 30 seconds.
Add ground pork and cook through, breaking it up with a spoon. Remove and set aside.
In the same pot, combine crushed tomatoes, beef stock, Italian seasoning, and chili flakes (optional). Bring to a boil.
Add frozen tortellini. Reduce to a simmer and cook for 5–6 minutes until tender.
Stir in spinach and cooked pork. Simmer for another 1–2 minutes, until spinach wilts.
Add a splash of heavy cream if using. Adjust seasoning with salt to taste.
Serve hot and top with parmesan and chopped parsley.
Recipe Tips
You can use ground turkey or beef instead of pork.
For more fiber, toss in zucchini or mushrooms.
