Marinated Salmon Bites

Calories are based on approximately 7oz salmon, 80g cooked rice, 1 cup steamed broccoli, and the marinade.
These air fryer salmon bites are sweet, salty, and perfectly crisp around the edges. Paired with rice and veggies, they make an easy, high-protein dinner that comes together fast.
Ingredients
2 salmon fillets (7 oz each), skin removed and cut into cubes
(Smaller fillets can be used — just adjust the cook time slightly)⅓ cup soy sauce (80g)
1 tbsp brown sugar (12g)
2 cloves garlic, minced
1 cup dry white rice (or 2 cups cooked)
3–4 cups steamed broccoli or other veggies
(cauliflower, snap peas, green beans, etc.)
Instructions
1. Marinate the Salmon
In a bowl, mix soy sauce, brown sugar, and garlic. Add cubed salmon and toss to coat. Let marinate in the fridge for 30 minutes while the rice and veggies cook.
2. Cook the Rice
Rinse rice under cold water and cook on the stovetop or in a rice cooker. Keep warm.
3. Steam the Veggies
Steam broccoli or your chosen veggies over boiling water for 5-7 minutes, or microwave with a splash of water for 2-3 minutes.
4. Air Fry the Salmon
Place marinated salmon cubes in a single layer in the air fryer basket. Air fry at 400°F for 7–9 minutes, until salmon is cooked through and lightly crisped.
5. Assemble the Bowls
Divide cooked rice and veggies between two bowls. Top each with half the salmon bites. Drizzle with extra sauce from the bowl if desired — or leave it off for a lighter option.
Recipe Tips
Smaller fillets work too: Just reduce air fryer time slightly to avoid overcooking.
